Look at that picture of an amazing slice of carrot cake and imagine it is actually healthier for you to eat! It is true! I am a big advocate of eating healthy, and I make every effort to use food as fuel. I always try to adapt recipes to fit my family’s paleo lifestyle. My workout partner has been cleaning up his diet for years now, and he LOVES carrot cake. He treated himself to one slice a week at a local restaurant for years. He has never had a weight problem, but was slowly starting to change his diet to better fuel his weightlifting, so the carrot cake full of sugar was possibly going to have to go. A friend of mine made an AMAZING grain free carrot cake sweetened with maple syrup and dates for a birthday party, and I got the recipe from her and made my workout partner this cake for his birthday one year. He is pretty picky about his carrot cake, and absolutely loved this one! It is GRAIN FREE, SWEETENED ONLY WITH MAPLE SYRUP AND DATES, AND IS PALEO FREINDLY. It it has become a yearly tradition for my workout partner’s birthday. It’s also a great addition to any holiday meal, and I don’t feel guilty when my family enjoys it! I personally exclude the cinnamon because my workout partner does not like it. For the cream cheese frosting, I have sometimes substituted honey for the maple syrup in a pinch and it still tastes great! The ginger in the frosting adds the perfect finishing touch! Ingredients
- 5 whole Carrots
- 1 cup Pure Maple Syrup
- 3/4 cup Coconut Flour
- 1 Tbsp ground Cinnamon
- 1 tsp Baking Soda
- 1 tsp Sea Salt
- 10 Pastured Eggs
- Date mixture using 10 Medjool dates instead of 6 (click here for recipe)
- 1 Tbsp Pure Vanilla Extract
- 1 cup Organic Coconut Oil, melted
- 2 cup Cream Cheese Frosting (click for recipe)
- 1 cup Organic Walnuts, chopped for garnish
